Honey (Flower nectar) is a viscid, translucent, nearly white to pale yellowish or yellowish brown saccharine fluid made by the hive bee Apis mellifica from the nectar of flowers and sweet plant juices. It becomes partially crystalline on keeping, owing to the separation of dextrose as crystals. It has an agreeable characteristic odour and a sweet taste depending upon the nature of the source.
COMPOSITION
Honey (Flower nectar) consist chiefly of about 70-80% of a mixture of dextrose and levulose in about equal parts, the residue is chiefly water about 14-20%. There are also
1.1-4.4% sucrose, 0.06-1.24% dextrin, 09-12% dextrin indicate that the bee has collected Honey-dew. Quite small amounts of volatile oil, vitamins, wax, salts of calcium, sodium, potassium, magnesium, iron, phosphate and pollen grains.
